Brut Introduces New Head Chef Albert Bojarowski

Albert Bojarowski is the new head chef at Brut. Before joining the team, he worked at Michelin Guide-recommended The Farm, as well as the former Atelier Amaro, and alongside Tomasz Welter and Adam Chrząstowski.

His experience at The Farm has also contributed to his particular interest in meat and the way it can be approached as a product with its own character and history. At Brut, this comes together with an interest in forest flavours and Polish mushrooms, while inspiration from beyond Poland is brought back to the plate through seasonal, local ingredients.
